How to cook bograch at home?

Bograch is a traditional Hungarian and Transcarpathian dish, usually cooked outdoors in a cauldron. Its name comes from the Hungarian word bogrács, meaning “pot.” But you can easily prepare this rich, flavorful meal at home.

Ingredients

  • 600–700 g meat (pork, beef, or mixed);
  • 100 g lard;
  • 4–5 potatoes;
  • 2 carrots;
  • 2–3 onions;
  • 2 bell peppers;
  • tomatoes or tomato paste;
  • garlic;
  • paprika (sweet and a bit hot);
  • cumin, bay leaf, black pepper, salt.

Cooking steps

Fry onions in lard, add paprika for aroma and color.

Brown the meat, then simmer with water for 30 minutes.

Add carrots, peppers, tomatoes, then potatoes.

Cover with water and cook for 1.5–2 hours.

Finish with garlic and spices.

Tips

Add homemade pasta pieces (“csipetke”) for a heartier version.

Adjust spiciness with chili.

Tastes even better the next day.
